Do you remember a humble vegetable ever getting as much good press as kale has over the past few years? I don’t think so..
Everyone’s still loving the lean, mean, leafy green kale goodness and we’re desperate to get more of it into our diets and with good reason! Jam-packed full of iron and fibre, it isn’t hard to see why this super veg is still a firm favourite of food writers and health aficionados alike. It’s versatile, full of essential vitamins and can be really quite tasty. It’s filling whilst being low in calories and certainly packs a nutritious punch.
Many people struggle with the taste or texture of kale when it’s served raw or steamed, but Claire’s avocado twist on the salad makes eating kale an absolute joy. Here on the retreat, our kale salad is always a real winner with the guests and they’re pleasantly surprised by just how yummy it is.

2 sticks celery, chopped
1 tsp salt
(will make 2 large servings)
